I make a vegan albondigas (mexican rice soup) and I add the rice as I go for the same reason. Try wild rice instead of pasta. Nutritionally better for you, and don't have the soggy pasta problem. I made up a recipe the other day very similar to this ( a few different ingredients, but essentially very similar)I except I used wild rice, and it was great. Had the leftover soup today for lunch, and it was as good or better today. When I meal prep with soup that calls for pasta, I make it separate and add in a serving when ready to eat, otherwise the pasta will expand in liquid and be mushy as you described. I’ve been watching my dad make carnitas since I can remember I’m almost 38. Not just because it’s my dad he makes some carnitas. Grew up on these carnitas El Guero is a very humble man totally recommend them I drive 45 minutes and waited an hour for a table very worth the wait they didn’t mention the chicharrones and how they give you a taco when you walk in. try Jalisco mexican restaurant in Oakland. On international Blvd. They're great and their green salsa is awesome. If you ever want to try them from Uruapan México, let me know, I know a bunch of great places. That's where I was born and go every year! Michoacán is where Pam lived, Morelia specifically, not far from Patzcuaro, mentioned in the article. I’m not sure about the cooking method they use but I have a carnita recipe that is pretty damn close to what I remember having in Michoacán. Just one of the things I miss about Chicago. Being so close to Pilsen we got the best Mexican food in the world. Nuevo León. Quernavacas so many more including this place. Yumm. Have you tried this spot, Jonathan LeBlanc? I wonder if it’s the same as Carnitas Uruapan in TJ and also in San Diego. I remember visiting the TJ location several times as a kid with my family...then finding it again here in SD when we moved here.

I am proud of this man for selling his gold medallion so that he can start up his business. Having property and owning a business are what we crave. It is the American dream. I remember el Sr. Guero...always very friendly & sweet...he would always give us a sample of the carnitas..I make sure I was up early Saturday morning to come with my parents. We live up in Lakeview area. This is the place we went where, all of a sudden, it wasn't racist that I could speak a little Spanish cus I could get us a table... mhmmm!
